The low-yield vines produce a wine with subtle yet distinct characteristics that speak of its strong identity. In our cellar, we uphold the same respectful practices as in the vineyard. Grapes are de-stemmed and delicately crushed, preserving part of the whole grapes for fermentation in cement barrels. This process ensures a delicate and consistent fermentation, followed by natural malolactic fermentation and aging in carefully selected French oak barrels.
